Region: Margaret River
A vibrant crimson red colour, the nose is lifted mulberry fruit aromas with hints of mocha and sweet vanilla.
The palate is soft and juicy with flavours of dark plum and cherry, finishing with fine tannins and subtle creamy oak.
Separate blocks of Shiraz from the Summus Vineyard, the Cellar Door Vineyard (Yallingup) and Carbunup River vineyards were destemmed (not crushed) and transferred to static tanks and inoculated immediately with a yeast strain isolated from the Cotes du Rhone. The wines were fermented on skins to dryness at a maximum of 28°C and pressed after 14 days. A wine with intense berry flavour; soft, juicy tannins and finishing with the delicate floral and spice perfumes that cool climate Shiraz is known for. The Margaret River region produced a strong 2015 vintage. The overall yields were down but the quality was excellent.
