It is perfectly dry and very, very moreish. Do not cellar this – drink it right now. Just make sure it is as chilled as you are.

Grape: Pinot Noir
Made using the French saignée method (to bleed). Pinot Noir juice spent a very short time on skins to achieve minimal phenolic and colour extraction, and obtain its beautiful pale colour. The juice was then treated to a slow, cool ferment in stainless steel. Minimal intervention to achieve the most natural expression of the wine.
It has a pale salmon colour with a hint of pink. It is light and refreshing on the palate. Lots of juicy berries and a hint of fresh watermelon.
