Established in 1972, Mountadam was founded by the late David Wynn, without question one of the most significant contributors to the Australian wine industry and an important part of the Mountadam story. In selecting the land for the Mountadam vineyard, Wynn was the first to recognise the potential of a cool, elevated site to produce wines of great elegance and structure, and chose an area high above the Eden Valley, which he named High Eden. At 550m above sea level, Mountadam is in fact the most elevated vineyard in South Australia.
From the 16 individual Chardonnay vineyards on the estate, 5 vineyard components were selected to make this wine. Harvesting occurred at optimal fruit flavor over a two week period starting on the 26th February . Picking the grapes in the cool of early morning followed by a gentle pressing a long cool 4 week fermentation with our natural cultured yeast, helps retain maximum grape flavors. This unoaked wine shows the crispness and concentration of ripe Chardonnay.
Light golden colour, fruit aromas of peach, nectarine and ripe figs complimenting the innate spice of quality French oak.
Typical of Mountadam Chardonnay, there are flavours of grilled nuts with clove and nutmeg spice woven around a green apple and citrus core. There is tremendous depth of flavour which lingers elegantly on the palate.
